Ingredients
- 1.5 lbs (about 680g) cherry tomatoes, washed
- 4–5 cloves garlic, minced
- 1/4 cup good quality extra virgin olive oil
- 1/2 teaspoon red pepper flakes (optional)
- 1/2 cup fresh basil leaves, torn or chopped
- Salt, to taste
- Freshly ground black pepper, to taste
Instructions
- 1. Prep the Tomatoes: Wash cherry tomatoes. You can leave them whole for a rustic sauce, or halve them for a quicker breakdown.
- 2. Sauté the Aromatics: Heat olive oil in a large skillet or Dutch oven over medium heat. Add minced garlic and red pepper flakes (if using). Sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.
- 3. Simmering the Sauce: Add cherry tomatoes to the pan. Increase heat to medium-high until tomatoes begin to blister and burst. Reduce heat to medium-low, cover, and simmer for 15-20 minutes, allowing tomatoes to break down.
- 4. Crushing & Thickening: Uncover and use the back of a wooden spoon or potato masher to gently crush any remaining whole tomatoes. Continue to simmer, uncovered, for another 5-10 minutes, stirring occasionally, until the sauce thickens slightly.
- 5. Finishing Touches: Remove from heat. Stir in fresh basil. Taste and adjust seasoning with salt and freshly ground black pepper as needed before serving with your favorite pasta.
