Ingredients

  • 1 pint (about 2 cups) cherry or grape tomatoes
  • 3 tablespoons extra virgin olive oil
  • 45 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (optional, adjust to taste)
  • 1/2 cup fresh basil leaves, roughly chopped, plus more for garnish
  • Salt and freshly ground black pepper to taste
  • 12 ounces spaghetti or your favorite pasta

Instructions

  • Prep Your Ingredients: Wash tomatoes. Mince garlic. Chop basil, reserving some for garnish.
  • Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes. Sauté for 1-2 minutes until fragrant, being careful not to burn.
  • Cook the Tomatoes: Add cherry tomatoes to the skillet. Season with salt and pepper. Stir, cover, and cook for 8-10 minutes until softened and burst.
  • Simmer to Perfection: Gently crush any remaining whole tomatoes with the back of a spoon. Reduce heat to low and simmer uncovered for 5-7 minutes to thicken.
