Ingredients
- 1 lb cherry tomatoes, halved
- 3–4 cloves garlic, thinly sliced
- 1/4 cup extra virgin olive oil
- 1/2 cup fresh basil leaves, roughly chopped
- 1/2 teaspoon red pepper flakes (optional, to taste)
- Salt and freshly ground black pepper to taste
- 1 lb spaghetti or pasta of choice
- 1/2 cup pasta water (reserved from cooking)
Instructions
- 1. Wash and halve cherry tomatoes. Slice garlic and chop basil.
- 2. Heat olive oil in a large skillet over medium heat. Add garlic and red pepper flakes; sauté for 1-2 minutes until fragrant.
- 3. Add halved cherry tomatoes, salt, and pepper to the pan. Cook on medium-high for 8-12 minutes, stirring occasionally, until tomatoes soften and burst.
- 4. Gently crush some tomatoes with the back of a spoon. Reduce heat to low and simmer for 5-7 minutes.
- 5. Remove from heat and stir in most of the fresh basil. Taste and adjust seasoning.
- 6. Cook spaghetti al dente. Reserve 1 cup pasta water, then drain spaghetti.
- 7. Add drained spaghetti to the sauce with 1/4 to 1/2 cup reserved pasta water. Toss vigorously until well-coated and creamy. Serve immediately, garnished with remaining basil.
