Ingredients
- 2 pints (about 4 cups) cherry or grape tomatoes
- 3–4 cloves garlic, minced
- 3–4 tablespoons good quality extra virgin olive oil
- 1/2 cup fresh basil leaves, roughly chopped
- 1/2 teaspoon red pepper flakes (optional, adjust to taste)
- Salt to taste
- Freshly ground black pepper to taste
- 1 pound spaghetti or your preferred pasta
Instructions
- 1. Prep Tomatoes and Aromatics: Wash cherry tomatoes. Mince garlic. Chop basil.
- 2. Sauté Garlic and Pepper Flakes: Heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes; sauté for 30 seconds until fragrant.
- 3. Add Tomatoes and Cook: Add cherry tomatoes, salt, and pepper to the skillet. Increase heat to medium-high and cook, stirring occasionally, until tomatoes burst and release juices (8-12 minutes).
- 4. Simmer and Develop Flavor: Reduce heat to low and simmer for another 5-10 minutes for flavors to meld and sauce to thicken. Taste and adjust seasoning.
- 5. Stir in Fresh Basil: Remove from heat and stir in fresh basil. Add a splash of reserved pasta water if the sauce is too thick.
- 6. Toss with Cooked Pasta: Drain cooked pasta, reserving 1 cup of pasta water. Add pasta to the sauce and toss to coat, adding reserved pasta water as needed for desired consistency. Serve immediately.
