Ingredients

  • 2 pints (about 4 cups) cherry tomatoes
  • 45 cloves garlic, minced
  • 3 tablespoons extra virgin olive oil
  • ½ cup fresh basil leaves, roughly chopped
  • 2 tablespoons fresh oregano, chopped (or 2 tsp dried)
  • ½ teaspoon salt, or to taste
  • ¼ teaspoon black pepper, or to taste
  • Pinch of sugar (¼-½ teaspoon, optional)
  • Optional: ¼ cup dry white or red wine

Instructions

  • 1. Prep Ingredients: Wash cherry tomatoes. Mince garlic. Chop fresh basil and oregano.
  • 2. Sauté Aromatics: In a large skillet or Dutch oven, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant and lightly golden.
  • 3. Add Tomatoes & Simmer: Add cherry tomatoes, salt, pepper, and optional sugar to the pan. If using wine, add it now and cook until almost evaporated. Bring to a gentle simmer, then reduce heat to low, cover partially, and cook for 20-30 minutes, stirring occasionally, until tomatoes burst and soften.
  • 4. Finish & Season: Remove lid. Stir in fresh basil and oregano (if using dried, add with tomatoes). Taste and adjust seasoning as needed. Gently mash some tomatoes for a chunkier sauce, or use an immersion blender for smoother.
  • 5. Serve: Toss with your favorite cooked pasta and garnish with Parmesan cheese and extra fresh basil.
