Ingredients
- 2 pints (about 4 cups) cherry tomatoes, whole or halved
- 3 tablespoons extra virgin olive oil
- 1 medium yellow onion, finely diced
- 4 cloves garlic, minced
- 1/2 teaspoon red pepper flakes (optional, for heat)
- 1/2 cup fresh basil, chopped (plus more for garnish)
- Salt and freshly ground black pepper to taste
- Optional: Parmesan rind for simmering
Instructions
- 1. Prepare Ingredients: Wash cherry tomatoes. Dice onion and mince garlic. Have olive oil and basil ready.
- 2. Sauté Aromatics: Heat olive oil in a large saucepan over medium heat. Add onion and cook until softened (5-7 minutes). Add minced garlic and red pepper flakes (if using), cook for 1 minute until fragrant.
- 3. Simmer Tomatoes: Add cherry tomatoes to the pan. Cook for 15-20 minutes, stirring and gently crushing tomatoes, until they burst and the sauce thickens. If using, add a Parmesan rind now.
- 4. Blend to Desired Texture: For a chunky sauce, remove Parmesan rind if used. For a smoother sauce, use an immersion blender or transfer to a regular blender to achieve desired consistency.
- 5. Season and Serve: Season generously with salt and pepper. Stir in chopped fresh basil. Serve immediately over your favorite pasta, garnished with extra basil and Parmesan cheese.
