Description
A vibrant and fresh homemade cherry tomato spaghetti sauce that comes together in just 30 minutes, bursting with the sweet flavor of sun-kissed tomatoes. This simple recipe proves that the best sauces are often made with the fewest, freshest ingredients.
Ingredients
- 1 tbsp extra virgin olive oil
- 1 small yellow onion, finely diced
- 3–4 cloves garlic, minced
- 1 pint (about 2 cups) cherry tomatoes, washed
- 1/2 tsp kosher salt, plus more to taste
- 1/4 tsp black pepper, plus more to taste
- 1/4 cup fresh basil leaves, roughly chopped or torn
- Optional: Pinch of red pepper flakes
- Optional: Freshly grated Parmesan cheese for serving
Instructions
- Heat olive oil in a large skillet or pot over medium heat. Add diced onion and cook, stirring occasionally, until translucent and soft, about 5-7 minutes.
- Add minced garlic and red pepper flakes (if using); cook for another minute until fragrant, being careful not to brown the garlic.
- Stir in cherry tomatoes and the initial 1/2 tsp of salt. Bring to a gentle simmer, then reduce heat to low, cover, and cook for 15-20 minutes, or until most tomatoes have burst.
- Uncover and use the back of a spoon or a potato masher to gently crush any remaining whole tomatoes. Continue to simmer, uncovered, for 5-10 minutes, allowing the sauce to reduce slightly and thicken.
- Remove from heat, stir in fresh basil, and taste. Adjust seasoning with additional salt and pepper as needed.
- Toss with your favorite cooked pasta and serve immediately, garnished with Parmesan cheese and extra basil if desired.
