Ingredients
- 2 lbs (approx. 900g) cherry tomatoes
- 4–5 cloves garlic, minced
- 1/4 cup extra virgin olive oil
- 1/2 cup fresh basil leaves, roughly chopped
- 1 tsp salt, or to taste
- 1/2 tsp black pepper, or to taste
- Pinch of sugar (optional, to balance acidity)
- Optional: Parmesan rind for simmering
- Optional: Red pepper flakes for heat
Instructions
- Prep Ingredients: Wash and halve cherry tomatoes if large. Mince garlic.
- Sauté Aromatics: In a large skillet or Dutch oven, heat olive oil over medium-low heat. Add minced garlic and sauté for 1-2 minutes until fragrant and lightly golden.
- Simmer Tomatoes: Add cherry tomatoes, salt, pepper, and optional sugar to the pan. Increase heat to medium. Cook, stirring occasionally and gently crushing tomatoes with a spoon, until they burst and soften, about 10-15 minutes.
- Achieve Consistency: Reduce heat to low and simmer for another 15-20 minutes, allowing flavors to meld and sauce to thicken. For a smoother sauce, use an immersion blender briefly.
- Finish and Serve: Remove from heat. Stir in fresh basil. Taste and adjust seasoning. Serve immediately with your favorite pasta and a sprinkle of fresh Parmesan, if desired.
