Unlock incredible flavor with this simple, vibrant cherry tomato spaghetti sauce. It’s bursting with sweet and tangy notes, and so velvety smooth you won’t believe it’s cream-free.
Ingredients
- 2 lbs (approx. 4 cups) cherry tomatoes, whole
- 3 tbsp extra virgin olive oil
- 4–5 cloves garlic, minced
- 1/2 tsp red pepper flakes (optional, for heat)
- 1/2 cup fresh basil, roughly chopped (divided)
- 2 tbsp fresh oregano, roughly chopped (divided)
- Salt and freshly ground black pepper to taste
- 1/4 cup water or vegetable broth (optional, for consistency)
Instructions
- 1. Prep Tomatoes: Wash cherry tomatoes. Mince garlic. Chop fresh herbs.
- 2. Cook Tomatoes: Heat olive oil in a large skillet over medium heat. Add whole cherry tomatoes and cook, stirring occasionally, until they burst and soften, about 10-15 minutes.
- 3. Add Aromatics: Stir in minced garlic and red pepper flakes (if using) and cook for another 1-2 minutes until fragrant, being careful not to burn the garlic.
- 4. Simmer: Add about half of the fresh basil and oregano to the skillet. If needed, add 1/4 cup water or broth. Bring to a gentle simmer and cook for 10-15 minutes, allowing flavors to meld.
- 5. Mash & Finish: Use the back of a spoon or a potato masher to gently mash the tomatoes to your desired consistency. Season generously with salt and pepper. Stir in the remaining fresh basil and oregano just before serving.
