Ingredients
- 1.5 lbs (approx. 680g) cherry tomatoes, washed
- 3 cloves garlic, minced
- 3 tbsp extra virgin olive oil
- 1/2 cup fresh basil leaves, roughly chopped or torn
- 1 tbsp fresh oregano leaves, chopped (or 1 tsp dried)
- 1/2 tsp red pepper flakes (optional, for a kick)
- Salt and freshly ground black pepper, to taste
- Cooked spaghetti, for serving
- Freshly grated Parmesan cheese, for serving (optional)
Instructions
- 1. Prep Your Ingredients: Wash cherry tomatoes. Mince garlic. Chop fresh basil and oregano.
- 2. Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn.
- 3. Simmer Tomatoes to Burst: Add cherry tomatoes, salt, pepper, and red pepper flakes (if using) to the skillet. Increase heat to medium-high and cook for 8-12 minutes, stirring occasionally, until tomatoes soften and burst. Gently mash some tomatoes with the back of a spoon.
- 4. Mash and Reduce: Reduce heat to low. Continue mashing tomatoes to create a chunky sauce. Simmer for another 5-10 minutes, stirring, until the sauce thickens slightly to your desired consistency. Taste and adjust seasoning.
- 5. Finish with Fresh Herbs: Remove from heat and stir in fresh basil and oregano. Serve immediately over cooked spaghetti, topped with Parmesan cheese if desired.
