This easy recipe creates a vibrant, sweet, and incredibly flavorful cherry tomato spaghetti sauce by roasting the tomatoes to perfection. It’s a quick weeknight meal that tastes like it simmered all day.
Ingredients
- 2 lbs (approx. 900g) cherry tomatoes
- 6–8 cloves garlic, peeled
- 1/4 cup extra virgin olive oil, plus more for serving
- 1/2 teaspoon sea salt, or to taste
- 1/4 teaspoon black pepper, or to taste
- Pinch of sugar (optional, to balance acidity)
- 1/4 cup water or vegetable broth
- 1/2 cup fresh basil leaves, torn or chopped
- Freshly grated Parmesan or Pecorino Romano cheese, for serving (optional)
Instructions
- Preheat oven to 400°F (200°C).
- On a large baking sheet, combine cherry tomatoes, garlic cloves, olive oil, salt, pepper, and sugar. Toss to coat evenly.
- Roast for 25-30 minutes, or until tomatoes are burst and caramelized.
- Transfer roasted tomatoes and garlic to a deep skillet. Mash gently with a potato masher.
- Add 1/4 cup water or broth, bring to a simmer, and cook for 10-15 minutes, stirring occasionally.
- Remove from heat, stir in fresh basil, and taste to adjust seasonings.
- Serve hot over your favorite pasta, topped with cheese if desired.
