Ingredients

  • 2 lbs (approx. 4 cups) cherry or grape tomatoes
  • 68 cloves garlic, peeled
  • 1/4 cup extra virgin olive oil, plus more for drizzling
  • 1 tsp sea salt, or to taste
  • 1/2 tsp freshly ground black pepper, or to taste
  • 1/41/2 tsp red pepper flakes (optional, for heat)
  • 1/4 cup fresh basil, chopped
  • 2 tbsp fresh oregano, chopped
  • Optional: pinch of sugar, splash of balsamic vinegar
  • For serving: cooked spaghetti, grated Parmesan cheese, extra fresh basil

Instructions

  • Preheat oven to 400°F (200°C). On a large baking sheet, combine cherry tomatoes and peeled garlic cloves. Drizzle with 1/4 cup olive oil, salt, pepper, and red pepper flakes (if using). Toss to coat, ensuring tomatoes are in a single layer.
  • Roast for 25-35 minutes, or until tomatoes are blistered, softened, and lightly caramelized, and garlic is fragrant and tender.
  • Carefully transfer roasted tomatoes and garlic (with pan juices) to a deep skillet or pot. Gently crush the tomatoes with a spoon or potato masher. Stir in chopped fresh basil and oregano.
  • Bring the sauce to a gentle simmer over medium-low heat. Cook for 10-15 minutes, allowing flavors to meld and sauce to thicken slightly.
  • For a smoother sauce, use an immersion blender or transfer to a regular blender to reach desired consistency. Taste and adjust seasonings as needed.
  • Serve immediately tossed with hot cooked spaghetti, garnished with extra fresh basil and grated Parmesan cheese.
