Ingredients
- 2 lbs (approx. 4 cups) cherry or grape tomatoes
- 6–8 cloves garlic, peeled
- 1/4 cup extra virgin olive oil, plus more for drizzling
- 1 tsp sea salt, or to taste
- 1/2 tsp freshly ground black pepper, or to taste
- 1/4 – 1/2 tsp red pepper flakes (optional, for heat)
- 1/4 cup fresh basil, chopped
- 2 tbsp fresh oregano, chopped
- Optional: pinch of sugar, splash of balsamic vinegar
- For serving: cooked spaghetti, grated Parmesan cheese, extra fresh basil
Instructions
- Preheat oven to 400°F (200°C). On a large baking sheet, combine cherry tomatoes and peeled garlic cloves. Drizzle with 1/4 cup olive oil, salt, pepper, and red pepper flakes (if using). Toss to coat, ensuring tomatoes are in a single layer.
- Roast for 25-35 minutes, or until tomatoes are blistered, softened, and lightly caramelized, and garlic is fragrant and tender.
- Carefully transfer roasted tomatoes and garlic (with pan juices) to a deep skillet or pot. Gently crush the tomatoes with a spoon or potato masher. Stir in chopped fresh basil and oregano.
- Bring the sauce to a gentle simmer over medium-low heat. Cook for 10-15 minutes, allowing flavors to meld and sauce to thicken slightly.
- For a smoother sauce, use an immersion blender or transfer to a regular blender to reach desired consistency. Taste and adjust seasonings as needed.
- Serve immediately tossed with hot cooked spaghetti, garnished with extra fresh basil and grated Parmesan cheese.
