This vibrant cherry tomato spaghetti sauce is incredibly easy to make, bursting with fresh flavor, and perfect for a quick weeknight meal. Enjoy the sweet and tangy notes of garden-fresh tomatoes in every bite.
Ingredients
- 2 pints (about 4 cups) cherry or grape tomatoes
- 4–5 cloves garlic, thinly sliced or minced
- 1/4 cup extra virgin olive oil
- 1/2 teaspoon red pepper flakes (or to taste)
- 1/2 cup fresh basil leaves, roughly chopped
- Salt and freshly ground black pepper, to taste
- Optional: 1/4 cup reserved pasta water
Instructions
- 1. Prep Ingredients: Wash tomatoes. Slice garlic. Roughly chop basil.
- 2. Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add garlic and red pepper flakes; sauté for 1-2 minutes until fragrant (do not burn).
- 3. Cook Tomatoes: Add cherry tomatoes to the pan. Season with salt and pepper. Increase heat to medium-high and cook for 8-12 minutes, stirring occasionally, until tomatoes burst. Gently press any un-burst tomatoes with the back of your spoon.
- 4. Simmer Sauce: Reduce heat to low and simmer for 5-10 minutes, allowing flavors to meld. If too thick, add a splash of pasta water.
- 5. Finish with Herbs: Remove from heat. Stir in fresh basil. Taste and adjust seasonings as needed. Toss with cooked spaghetti and serve immediately.
