Ingredients

  • 2 pints (about 4 cups) cherry or grape tomatoes
  • 45 cloves garlic, thinly sliced or minced
  • 1/4 cup extra virgin olive oil
  • 1/2 teaspoon red pepper flakes (or to taste)
  • 1/2 cup fresh basil leaves, roughly chopped
  • Salt and freshly ground black pepper, to taste
  • Optional: 1/4 cup reserved pasta water

Instructions

  • 1. Prep Ingredients: Wash tomatoes. Slice garlic. Roughly chop basil.
  • 2. Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add garlic and red pepper flakes; sauté for 1-2 minutes until fragrant (do not burn).
  • 3. Cook Tomatoes: Add cherry tomatoes to the pan. Season with salt and pepper. Increase heat to medium-high and cook for 8-12 minutes, stirring occasionally, until tomatoes burst. Gently press any un-burst tomatoes with the back of your spoon.
  • 4. Simmer Sauce: Reduce heat to low and simmer for 5-10 minutes, allowing flavors to meld. If too thick, add a splash of pasta water.
  • 5. Finish with Herbs: Remove from heat. Stir in fresh basil. Taste and adjust seasonings as needed. Toss with cooked spaghetti and serve immediately.
