Description
This incredibly flavorful and easy cherry tomato spaghetti sauce is made by roasting sweet cherry tomatoes until they burst, creating a naturally delicious and thick sauce. Perfect for a quick weeknight meal or an impressive dinner party.
Ingredients
- 2 lbs (approx. 4 cups) cherry or grape tomatoes, halved
- 4–6 cloves garlic, thinly sliced
- 1/4 cup extra virgin olive oil
- 1 tsp salt, or to taste
- 1/2 tsp black pepper, or to taste
- 1/4 – 1/2 tsp red pepper flakes (optional, for heat)
- 1/2 cup fresh basil leaves, torn
- 2 tbsp fresh oregano, chopped (optional)
Instructions
- Preheat oven to 400°F (200°C).
- Place halved cherry tomatoes and sliced garlic in a large roasting pan or oven-safe skillet.
- Drizzle with olive oil, sprinkle with salt, black pepper, and red pepper flakes (if using). Toss to coat evenly.
- Roast for 25-35 minutes, until tomatoes have burst and are slightly caramelized.
- Transfer pan to stovetop (or move contents to a saucepan). Simmer over medium-low heat for 5-10 minutes.
- Use a potato masher or fork to gently crush tomatoes for desired sauce consistency.
- Remove from heat. Stir in fresh basil and oregano. Taste and adjust seasoning as needed.
- Serve immediately over your favorite pasta.
