Ingredients
- 1 tbsp extra virgin olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 1/4 tsp red pepper flakes (optional)
- 2 pints (approx. 4 cups) cherry tomatoes, halved
- 1/2 tsp salt, or to taste
- 1/4 tsp black pepper, or to taste
- 1/4 cup fresh basil, chopped
- 1 tbsp fresh oregano, chopped
- 2 tbsp freshly grated Parmesan cheese, for serving (optional)
Instructions
- Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5-7 minutes.
- Add minced garlic and red pepper flakes (if using); cook for 1 minute until fragrant.
- Stir in halved cherry tomatoes, salt, and pepper. Bring to a simmer, then reduce heat to low, cover, and cook for 15-20 minutes, until tomatoes burst.
- Uncover and gently crush some of the tomatoes with the back of a spoon. Simmer uncovered for another 5-10 minutes to thicken.
- Stir in fresh basil and oregano. Taste and adjust seasoning. Serve hot over pasta with Parmesan.
