Description
This vibrant cherry tomato spaghetti sauce bursts with natural sweetness and fresh herb flavor. It’s an incredibly easy and quick recipe that will become your new weeknight favorite.
Ingredients
- 1 tbsp good quality extra virgin olive oil
- 1 small onion or shallot, finely diced
- 3–4 cloves garlic, minced
- 1/2 tsp red pepper flakes (optional)
- 2 pints (about 4 cups) cherry or grape tomatoes, halved
- 1/2 tsp dried oregano
- 1/4 cup fresh basil leaves, torn or chopped
- Salt and freshly ground black pepper to taste
- Optional: 1 tbsp dry white wine or balsamic glaze
Instructions
- Prep Ingredients: Halve all cherry tomatoes, mince garlic, and dice the onion/shallot.
- Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add onion/shallot and cook until translucent (3-5 mins). Add garlic and red pepper flakes (if using) and cook for 1 minute more until fragrant.
- Add Tomatoes & Simmer: Add halved cherry tomatoes and dried oregano to the pan. Stir, bring to a gentle simmer, then cover and cook on low for 15-20 minutes.
- Burst & Crush: Uncover and use the back of a spoon to gently crush any unburst tomatoes. Simmer uncovered for 5-10 minutes more to thicken slightly.
- Season & Finish: Remove from heat. Stir in fresh basil, optional wine/balsamic. Season generously with salt and pepper to taste. Serve immediately over your favorite pasta.
