Ingredients
- 1.5 lbs (about 4 cups) cherry tomatoes, halved
- 3 tablespoons extra virgin olive oil
- 4–5 cloves garlic, thinly sliced
- 1/2 – 1 teaspoon red pepper flakes (optional, to taste)
- 1 tablespoon balsamic vinegar
- 1/2 cup fresh basil leaves, roughly chopped
- Salt to taste
- Freshly ground black pepper to taste
Instructions
- 1. Prep Tomatoes: Halve all cherry tomatoes and set aside.
- 2. Sauté Aromatics: In a large skillet, heat olive oil over medium heat. Add garlic and red pepper flakes; sauté for 1-2 minutes until fragrant (do not burn).
- 3. Add Tomatoes & Balsamic: Add halved cherry tomatoes, balsamic vinegar, a pinch of salt, and pepper to the skillet. Stir to combine.
- 4. Simmer: Bring to a gentle simmer, then reduce heat to medium-low. Cover and cook for 15-20 minutes, stirring occasionally, until tomatoes burst and soften.
- 5. Mash & Reduce: Uncover and gently mash some of the tomatoes with a spoon or potato masher. Continue simmering, uncovered, for 5-10 minutes to thicken to desired consistency.
- 6. Finish & Serve: Remove from heat, stir in fresh basil. Taste and adjust seasoning with more salt and pepper as needed. Serve immediately with your favorite pasta.
