Ingredients
- 1.5 lbs (approx. 4 cups) fresh cherry or grape tomatoes, whole or halved
- 3 tbsp extra virgin olive oil
- 4–5 cloves garlic, thinly sliced or minced
- 1 tsp dried oregano
- 1/4 – 1/2 tsp red pepper flakes (optional, to taste)
- 1/2 tsp salt, or to taste
- 1/4 tsp black pepper, or to taste
- 1/2 cup fresh basil leaves, roughly chopped
- Optional: 1/2 small onion or 2 shallots, finely diced
Instructions
- 1. Prep Ingredients: Wash tomatoes, slice garlic, chop basil.
- 2. Sauté Aromatics: Heat olive oil in a large pan over medium heat. Sauté garlic (and optional onion/shallots) for 1-2 minutes until fragrant; do not brown.
- 3. Add Tomatoes & Simmer: Add tomatoes, oregano, red pepper flakes (if using), salt, and pepper to the pan. Stir, cover, and simmer for 10-15 minutes until tomatoes soften and burst.
- 4. Crush & Season: Uncover and gently crush about half to three-quarters of the tomatoes with the back of a spoon or potato masher. Simmer uncovered for 5-10 minutes to reduce and thicken. Taste and adjust seasoning.
- 5. Finish with Herbs: Remove from heat and stir in fresh basil. Serve immediately over your favorite pasta or use as desired.
