Description
This vibrant cherry tomato spaghetti sauce bursts with fresh, sweet flavors, perfect for a quick and delicious weeknight meal. It’s incredibly simple to make and tastes like summer in a bowl.
Ingredients
- 1 pint (about 2 cups) cherry or grape tomatoes
- 3 cloves garlic, minced
- 2 tablespoons extra virgin olive oil
- 1/2 teaspoon red pepper flakes (optional)
- 1/2 cup fresh basil leaves, roughly chopped
- 2 tablespoons fresh parsley, chopped
- Salt and freshly ground black pepper to taste
- Optional: pinch of sugar, splash of balsamic vinegar
Instructions
- Wash and, if desired, lightly prick each cherry tomato. Mince garlic.
- Heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes (if using); sauté for 30-60 seconds until fragrant, being careful not to burn.
- Add cherry tomatoes, a generous pinch of salt, and pepper to the pan. Increase heat to medium-high and cook, stirring occasionally, until tomatoes soften and burst (8-10 minutes). Gently press with a spoon to encourage bursting.
- Reduce heat to low and simmer for 10-15 minutes, allowing flavors to meld and sauce to thicken.
- Remove from heat. Stir in fresh basil and parsley. Taste and adjust seasoning as needed (more salt, pepper, or a pinch of sugar/balsamic vinegar). Serve immediately over your favorite pasta.
