Easy Cherry Tomato Spaghetti Sauce

  • Total Time: 35 minutes
  • Yield: 4 servings

Description

This vibrant cherry tomato spaghetti sauce bursts with fresh, sweet flavors, perfect for a quick and delicious weeknight meal. It’s incredibly simple to make and tastes like summer in a bowl.

Ingredients

  • 1 pint (about 2 cups) cherry or grape tomatoes
  • 3 cloves garlic, minced
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 cup fresh basil leaves, roughly chopped
  • 2 tablespoons fresh parsley, chopped
  • Salt and freshly ground black pepper to taste
  • Optional: pinch of sugar, splash of balsamic vinegar

Instructions

  • Wash and, if desired, lightly prick each cherry tomato. Mince garlic.
  • Heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes (if using); sauté for 30-60 seconds until fragrant, being careful not to burn.
  • Add cherry tomatoes, a generous pinch of salt, and pepper to the pan. Increase heat to medium-high and cook, stirring occasionally, until tomatoes soften and burst (8-10 minutes). Gently press with a spoon to encourage bursting.
  • Reduce heat to low and simmer for 10-15 minutes, allowing flavors to meld and sauce to thicken.
  • Remove from heat. Stir in fresh basil and parsley. Taste and adjust seasoning as needed (more salt, pepper, or a pinch of sugar/balsamic vinegar). Serve immediately over your favorite pasta.
