Description
A vibrant and fresh spaghetti sauce made with sweet cherry tomatoes, aromatic garlic, and fresh basil. Perfect for a quick and delicious weeknight meal.
Ingredients
- 2 lbs cherry or grape tomatoes
- 1/4 cup extra virgin olive oil
- 6–8 cloves garlic, thinly sliced
- 1/2 cup fresh basil leaves, packed
- 1 tsp dried oregano (or 1 tbsp fresh, chopped)
- 1/4–1/2 tsp red pepper flakes (optional)
- 1 tsp sea salt (or to taste)
- 1/2 tsp black pepper (or to taste)
- 1/2 tsp granulated sugar (optional, to balance acidity)
- 1 lb spaghetti or preferred pasta
Instructions
- Heat olive oil in a large skillet or Dutch oven over medium-low heat. Add sliced garlic and red pepper flakes (if using); sauté for 2-3 minutes until fragrant.
- Add cherry tomatoes, oregano, salt, and pepper. Increase heat to medium, bring to a gentle simmer, then reduce heat to low, cover, and cook for 15-20 minutes until tomatoes burst.
- Uncover and use the back of a spoon or potato masher to gently crush remaining tomatoes. Simmer uncovered for another 5-10 minutes, stirring occasionally, until sauce thickens.
- Remove from heat. Stir in fresh basil. Taste and adjust seasonings (add optional sugar if needed).
- Cook pasta according to package directions, reserving 1 cup of pasta water. Add drained pasta directly to the sauce; toss to coat. Add reserved pasta water as needed for desired consistency.
- Serve immediately.
