Ingredients

  • 2 lbs (approx. 900g) cherry or grape tomatoes
  • 68 cloves garlic, peeled
  • 1/2 cup extra virgin olive oil
  • 1 tsp red pepper flakes (optional)
  • 1/2 tsp salt (plus more to taste)
  • 1/4 tsp black pepper (plus more to taste)
  • 1/4 cup fresh basil, chopped
  • 1 tbsp fresh oregano, chopped (or 1 tsp dried)
  • Cooked spaghetti, for serving
  • Freshly grated Parmesan cheese, for serving

Instructions

  • Preheat oven to 400°F (200°C).
  • On a large baking sheet, combine cherry tomatoes, peeled garlic cloves, red pepper flakes (if using), olive oil, salt, and black pepper. Toss to coat evenly.
  • Spread tomatoes and garlic in a single layer. Roast for 25-35 minutes, until tomatoes are blistered and bursting, and garlic is tender.
  • Transfer roasted tomatoes and pan juices to a large skillet or pot. Gently crush tomatoes with a fork or potato masher to desired consistency.
  • Bring to a gentle simmer over medium heat. Stir in fresh oregano and simmer for 5-10 minutes, allowing flavors to meld.
