Description
This easy-to-bake sauce features sweet roasted cherry tomatoes and garlic, creating an incredibly flavorful and vibrant spaghetti sauce. It’s perfect for a quick weeknight meal with maximum taste.
Ingredients
- 2 lbs (approx. 900g) cherry or grape tomatoes
- 6–8 cloves garlic, peeled
- 1/2 cup extra virgin olive oil
- 1 tsp red pepper flakes (optional)
- 1/2 tsp salt (plus more to taste)
- 1/4 tsp black pepper (plus more to taste)
- 1/4 cup fresh basil, chopped
- 1 tbsp fresh oregano, chopped (or 1 tsp dried)
- Cooked spaghetti, for serving
- Freshly grated Parmesan cheese, for serving
Instructions
- Preheat oven to 400°F (200°C).
- On a large baking sheet, combine cherry tomatoes, peeled garlic cloves, red pepper flakes (if using), olive oil, salt, and black pepper. Toss to coat evenly.
- Spread tomatoes and garlic in a single layer. Roast for 25-35 minutes, until tomatoes are blistered and bursting, and garlic is tender.
- Transfer roasted tomatoes and pan juices to a large skillet or pot. Gently crush tomatoes with a fork or potato masher to desired consistency.
- Bring to a gentle simmer over medium heat. Stir in fresh oregano and simmer for 5-10 minutes, allowing flavors to meld.
- Taste and adjust seasoning as needed. Remove from heat and stir in fresh basil.
- Serve immediately tossed with cooked spaghetti and a sprinkle of Parmesan cheese.
