Description

Discover how to make the best homemade cherry tomato spaghetti sauce with this simple, step-by-step recipe. Perfect for a quick and incredibly flavorful weeknight meal!

Ingredients

  • 2 tbsp extra virgin olive oil
  • 1 small yellow onion, diced
  • 34 cloves garlic, minced
  • 2 pints (about 4 cups) cherry tomatoes, whole
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp black pepper (or to taste)
  • 1/2 tsp dried oregano (or 1 tbsp fresh)
  • 1/4 cup fresh basil leaves, roughly chopped (plus more for garnish)
  • 1 tbsp balsamic vinegar
  • 1/4 tsp granulated sugar (optional, to balance acidity)

Instructions

  • 1. Sauté Aromatics: Heat olive oil in a large skillet or Dutch oven over medium heat. Add diced onion and cook until softened, about 5-7 minutes. Add minced garlic and cook for another minute until fragrant.
  • 2. Add Tomatoes and Seasoning: Add whole cherry tomatoes to the pan. Season with salt, pepper, dried oregano (if using), and half of the fresh basil. Stir in balsamic vinegar and optional sugar.
  • 3. Simmer the Sauce: Bring to a gentle simmer. Reduce heat to low, cover, and cook for 15-20 minutes, or until tomatoes have burst and softened. Use the back of a spoon to gently crush any remaining whole tomatoes.
  • 4. Finish and Serve: Taste and adjust seasoning as needed. Stir in the remaining fresh basil and a final drizzle of olive oil. Serve hot over your favorite pasta with grated cheese.
