This vibrant cherry tomato spaghetti sauce bursts with fresh flavor and comes together quickly for a perfect weeknight meal. It’s naturally sweet, tangy, and absolutely delicious.
Ingredients
- 1.5 lbs (about 4 cups) cherry tomatoes, washed
- 4 cloves garlic, minced
- 1/4 cup extra virgin olive oil
- 1/2 cup fresh basil leaves, roughly torn or chiffonaded
- 1/2 tsp sea salt, or to taste
- 1/4 tsp black pepper, freshly ground, or to taste
- Pinch of sugar (optional, to balance acidity)
Instructions
- Prep Ingredients: Wash cherry tomatoes. Mince garlic.
- Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add minced garlic and cook for 30-60 seconds until fragrant, being careful not to burn.
- Cook Tomatoes: Add cherry tomatoes to the pan. Increase heat to medium-high and cook for 8-10 minutes, stirring occasionally, until most tomatoes have burst and softened. Use the back of a spoon or potato masher to encourage bursting.
- Season and Finish: Remove from heat. Season generously with salt and pepper. Taste and add a pinch of sugar if needed to balance acidity. Stir in fresh basil leaves just before serving.
- Serve: Toss with your favorite cooked pasta and enjoy immediately.
