Ingredients
- 2 tbsp extra virgin olive oil
- 1 small yellow onion, finely diced
- 3 cloves garlic, minced
- 1.5 lbs (about 680g) cherry tomatoes
- 1/2 tsp salt (or to taste)
- 1/4 tsp black pepper (or to taste)
- 1/4 cup fresh basil leaves, roughly torn
- Optional: Pinch of red pepper flakes
- Optional: Pinch of sugar
- Optional: Splash of vegetable broth or pasta water
Instructions
- Heat olive oil in a large skillet or wide pot over medium heat.
- Add diced onion and cook until softened and translucent, about 5-7 minutes.
- Add minced garlic (and red pepper flakes if using) and cook for 1 minute until fragrant.
- Add cherry tomatoes to the skillet. Increase heat to medium-high.
- Cook, stirring occasionally, until tomatoes begin to burst and release their juices, about 8-12 minutes. Gently press on some with a spoon.
- Reduce heat to low and simmer for 10-15 minutes, allowing flavors to meld. Add a splash of broth or pasta water if too thick.
- Remove from heat. Stir in fresh basil leaves.
- Taste and adjust seasoning with salt, pepper, or a pinch of sugar if needed.
- Serve immediately with your favorite pasta.
