  • 45 cloves garlic, thinly sliced or roughly chopped
  • 1/4 cup extra virgin olive oil
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper, freshly ground, or to taste
  • 1/4 cup fresh basil leaves, roughly chopped
  • 2 tablespoons fresh oregano, chopped (or 1 teaspoon dried)
  • 1 tablespoon balsamic glaze (optional, for finishing)

Instructions

  • 1. Prep and Roast Tomatoes: Preheat oven to 400°F (200°C). On a large baking sheet, combine cherry tomatoes, garlic, olive oil, red pepper flakes (if using), salt, and pepper. Toss to coat. Roast for 20-25 minutes, or until tomatoes are burst and caramelized.
  • 2. Simmer the Sauce: Transfer roasted tomatoes and juices to a medium saucepan. Gently crush tomatoes with a potato masher or spoon. Add fresh basil and oregano. Bring to a gentle simmer over medium-low heat and cook for 10-15 minutes, stirring occasionally, until slightly thickened.
