Description
This easy cherry tomato spaghetti sauce features sweet, roasted tomatoes for an intensely flavorful and incredibly fresh pasta sauce. It’s a quick, family-friendly recipe that tastes like it simmered all day.
Ingredients
- 2 lbs (about 900g) cherry or grape tomatoes
- 6 cloves garlic, peeled and roughly chopped
- 1/2 small yellow onion, thinly sliced
- 1/4 cup extra virgin olive oil, divided
- 1 tbsp balsamic vinegar
- 1/2 tsp red pepper flakes (optional, adjust to taste)
- 1/2 cup fresh basil leaves, roughly chopped
- Salt and freshly ground black pepper to taste
- (Optional: Parmesan rind for simmering)
Instructions
- Prep & Roast: Preheat oven to 400°F (200°C). Toss cherry tomatoes, chopped garlic, and sliced onion with 2 tablespoons olive oil, salt, and pepper on a large baking sheet. Roast for 25-35 minutes, until tomatoes are bursting and slightly charred.
- Simmer: Transfer roasted vegetables to a medium saucepan. Add balsamic vinegar and red pepper flakes. Bring to a gentle simmer over medium-low heat and cook for 15-20 minutes, allowing flavors to meld and sauce to slightly reduce. (Add Parmesan rind here if using).
- Blend (Optional): For a smoother sauce, use an immersion blender to purée to your desired consistency. For a chunkier sauce, simply mash with a fork.
- Finish & Serve: Remove from heat. Stir in fresh basil and the remaining 2 tablespoons of olive oil. Taste and adjust seasoning as needed. Serve hot over your favorite pasta.
