Description
An incredibly flavorful and easy-to-make roasted cherry tomato spaghetti sauce that bursts with sweet, savory, and aromatic notes. Perfect for a quick weeknight meal or an impressive dinner party.
Ingredients
- 2 lbs cherry or grape tomatoes
- 6–8 cloves garlic, peeled and roughly chopped
- 1/4 cup extra virgin olive oil
- 1 tsp Kosher salt, or to taste
- 1/2 tsp freshly ground black pepper, or to taste
- 1/2 cup fresh basil leaves, torn or chopped
- Optional: pinch of sugar or splash of balsamic vinegar
Instructions
- Preheat oven to 400°F (200°C).
- On a large baking sheet, combine cherry tomatoes and chopped garlic. Drizzle generously with olive oil, then sprinkle with salt and pepper. Toss to coat evenly.
- Roast for 25-35 minutes, or until tomatoes are burst, softened, and slightly caramelized.
- Carefully transfer the roasted tomatoes and garlic to a blender or food processor. Blend until smooth for a creamy sauce, or pulse a few times for a chunkier texture.
- Pour the sauce into a saucepan. Stir in the fresh basil leaves. Heat gently over low heat for 5 minutes, allowing basil to infuse.
- Taste and adjust seasoning if needed. Serve warm over your favorite pasta.
