This incredibly easy and vibrant cherry tomato spaghetti sauce bursts with fresh, sweet flavors, perfect for a quick weeknight meal. It’s naturally sweet, thickens beautifully, and elevates any pasta dish.
Ingredients
- 2 pints (about 4 cups) fresh cherry or grape tomatoes
- 1/4 cup extra virgin olive oil
- 4–6 cloves garlic, minced
- 1/2 teaspoon red pepper flakes (optional, adjust to taste)
- 1 teaspoon sea salt (or to taste)
- 1/2 teaspoon freshly ground black pepper (or to taste)
- 1/2 cup fresh basil leaves, roughly chopped
- Optional: Drizzle of balsamic glaze
Instructions
- 1. Prep Tomatoes and Garlic: Wash tomatoes. Mince garlic.
- 2. Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add garlic and red pepper flakes; sauté for 1 minute until fragrant.
- 3. Add Tomatoes and Simmer: Add cherry tomatoes, salt, and pepper. Increase heat to medium-high to bring to a simmer. Reduce heat to medium-low, cover, and cook for 10-15 minutes.
- 4. Burst and Crush Tomatoes: Uncover. Use a spoon or masher to gently crush burst tomatoes. Simmer uncovered for another 10-15 minutes, stirring occasionally, until thickened.
- 5. Finish with Basil and Season: Remove from heat. Stir in fresh basil. Taste and adjust seasonings (add a pinch of sugar if needed, or balsamic glaze). Serve immediately over your favorite pasta.
