Ingredients
- 2 pints (about 4 cups) cherry or grape tomatoes
- 4–5 cloves garlic, minced or thinly sliced
- 1/4 cup extra virgin olive oil, plus more for finishing
- 1/2 cup fresh basil leaves, roughly chopped, plus more for garnish
- 2 tablespoons fresh oregano, chopped (or 2 teaspoons dried)
- 1/2 teaspoon red pepper flakes (optional)
- 1 teaspoon sea salt, or to taste
- 1/2 teaspoon black pepper, freshly ground, or to taste
- Optional: Pinch of sugar, to taste
- Optional: Pasta water for thinning
Instructions
- Prep Your Ingredients: Wash tomatoes. Mince garlic. Chop basil and oregano.
- Sauté Garlic and Tomatoes: Heat olive oil in a large skillet over medium heat. Add garlic and red pepper flakes (if using); sauté 1 minute until fragrant. Add cherry tomatoes, increase heat to medium-high, and sauté 5-7 minutes until tomatoes soften and burst.
- Simmer to Perfection: Reduce heat to low. Add oregano, salt, and pepper. Cover and simmer gently for 15-20 minutes, stirring occasionally.
- Mash and Season: Remove lid. Gently mash tomatoes with a spoon or potato masher to desired consistency. Taste and adjust seasoning with salt, pepper, or a pinch of sugar.
- Finish with Fresh Herbs: Turn off heat. Stir in fresh basil leaves until wilted. Serve immediately with your favorite pasta.
