Craft a vibrant and flavorful cherry tomato spaghetti sauce in under 30 minutes. This recipe highlights the natural sweetness of cherry tomatoes for a light yet satisfying meal.
Ingredients
- 1 lb (about 4 cups) cherry or grape tomatoes
- 3–4 cloves garlic, minced
- 1/4 cup extra virgin olive oil
- 1/2 tsp red pepper flakes (optional, adjust to taste)
- 1/2 cup fresh basil leaves, roughly chopped
- Salt and freshly ground black pepper to taste
- 1 lb spaghetti or your favorite pasta
Instructions
- 1. Wash tomatoes and mince garlic. You can lightly prick tomatoes to encourage bursting.
- 2. Heat olive oil in a large skillet over medium-low heat. Add minced garlic and red pepper flakes (if using); sauté for 1-2 minutes until fragrant.
- 3. Add cherry tomatoes to the skillet, stir to coat, and increase heat to medium. Bring to a gentle simmer, then cover and cook for 10-15 minutes, stirring occasionally, until tomatoes soften and burst.
- 4. Remove lid, and gently mash any remaining whole tomatoes with the back of a spoon or potato masher. Simmer uncovered for another 5-10 minutes to thicken slightly.
- 5. Remove from heat, stir in fresh basil, and season generously with salt and black pepper. Toss immediately with cooked spaghetti and serve with Parmesan cheese.
