Description
A vibrant, rustic spaghetti sauce made with sweet bursting cherry tomatoes, fresh garlic, and basil. It’s incredibly easy to make and perfect for a quick, flavorful weeknight meal.
Ingredients
- 1 pint (about 2 cups) cherry or grape tomatoes
- 3–4 cloves garlic, minced
- 3 tablespoons extra virgin olive oil
- ¼ teaspoon red pepper flakes (or to taste)
- ½ cup fresh basil leaves, chopped or torn
- Salt and freshly ground black pepper to taste
- Optional: ½ teaspoon balsamic vinegar or squeeze of lemon juice
- Optional: ¼ teaspoon sugar
Instructions
- 1. Prep Ingredients: Wash tomatoes. Mince garlic.
- 2. Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes; sauté for 1-2 minutes until fragrant.
- 3. Burst Tomatoes: Add cherry tomatoes to the skillet. Season with salt and pepper. Increase heat to medium-high and cook, stirring occasionally, for 8-12 minutes until tomatoes burst and soften.
- 4. Simmer Sauce: Gently mash any remaining whole tomatoes with a spoon. Reduce heat to low and simmer for 5-7 minutes. Stir in optional balsamic vinegar/lemon juice or sugar if using.
- 5. Finish and Serve: Remove from heat and stir in fresh basil. Taste and adjust seasonings as needed. Serve immediately over cooked spaghetti or your favorite pasta.
