Description

A vibrant, rustic spaghetti sauce made with sweet bursting cherry tomatoes, fresh garlic, and basil. It’s incredibly easy to make and perfect for a quick, flavorful weeknight meal.


Ingredients

  • 1 pint (about 2 cups) cherry or grape tomatoes
  • 34 cloves garlic, minced
  • 3 tablespoons extra virgin olive oil
  • ¼ teaspoon red pepper flakes (or to taste)
  • ½ cup fresh basil leaves, chopped or torn
  • Salt and freshly ground black pepper to taste
  • Optional: ½ teaspoon balsamic vinegar or squeeze of lemon juice
  • Optional: ¼ teaspoon sugar

Instructions

  • 1. Prep Ingredients: Wash tomatoes. Mince garlic.
  • 2. Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes; sauté for 1-2 minutes until fragrant.
  • 3. Burst Tomatoes: Add cherry tomatoes to the skillet. Season with salt and pepper. Increase heat to medium-high and cook, stirring occasionally, for 8-12 minutes until tomatoes burst and soften.
  • 4. Simmer Sauce: Gently mash any remaining whole tomatoes with a spoon. Reduce heat to low and simmer for 5-7 minutes. Stir in optional balsamic vinegar/lemon juice or sugar if using.
  • 5. Finish and Serve: Remove from heat and stir in fresh basil. Taste and adjust seasonings as needed. Serve immediately over cooked spaghetti or your favorite pasta.
