This vibrant cherry tomato spaghetti sauce bursts with fresh, sweet flavors, clinging perfectly to your favorite pasta. It’s an incredibly easy and reliable recipe that’s sure to become a weeknight staple.
Ingredients
- 2 lbs cherry tomatoes, left whole
- ¼ cup extra virgin olive oil
- 4–6 cloves garlic, thinly sliced
- ½ teaspoon red pepper flakes (optional)
- ¼ cup fresh basil, chopped (plus more for garnish)
- 1 tablespoon fresh oregano, chopped
- 1 teaspoon sea salt (or to taste)
- ½ teaspoon black pepper (or to taste)
- ¼ cup dry white wine or vegetable broth (optional)
- ¼ teaspoon sugar (optional, to balance acidity)
Instructions
- Heat olive oil in a large skillet or Dutch oven over medium-low heat. Add sliced garlic and optional red pepper flakes; sauté for 3-5 minutes until fragrant and lightly golden.
- Increase heat to medium. Add whole cherry tomatoes, salt, and pepper. Cook, stirring occasionally, for 10-15 minutes until most tomatoes have burst and released their juices. Gently press some with a spoon to aid bursting.
- Stir in fresh oregano and optional white wine or broth. Reduce heat to low and simmer gently for 10-15 minutes to allow flavors to meld and deepen.
- Remove from heat. Stir in chopped fresh basil. Taste and adjust seasoning with more salt, pepper, or a pinch of sugar if needed.
- Toss immediately with cooked pasta and serve warm, garnished with extra fresh basil and grated Parmesan cheese.
