  • 2 lbs cherry tomatoes, left whole
  • ¼ cup extra virgin olive oil
  • 46 cloves garlic, thinly sliced
  • ½ teaspoon red pepper flakes (optional)
  • ¼ cup fresh basil, chopped (plus more for garnish)
  • 1 tablespoon fresh oregano, chopped
  • 1 teaspoon sea salt (or to taste)
  • ½ teaspoon black pepper (or to taste)
  • ¼ cup dry white wine or vegetable broth (optional)
  • ¼ teaspoon sugar (optional, to balance acidity)

Instructions

  • Heat olive oil in a large skillet or Dutch oven over medium-low heat. Add sliced garlic and optional red pepper flakes; sauté for 3-5 minutes until fragrant and lightly golden.
  • Increase heat to medium. Add whole cherry tomatoes, salt, and pepper. Cook, stirring occasionally, for 10-15 minutes until most tomatoes have burst and released their juices. Gently press some with a spoon to aid bursting.
  • Stir in fresh oregano and optional white wine or broth. Reduce heat to low and simmer gently for 10-15 minutes to allow flavors to meld and deepen.
  • Remove from heat. Stir in chopped fresh basil. Taste and adjust seasoning with more salt, pepper, or a pinch of sugar if needed.
