Ingredients
- 1 tbsp extra virgin olive oil
- 4–5 cloves garlic, thinly sliced or minced
- 2 pints (about 4 cups) cherry tomatoes, whole or gently pricked
- 1/2 tsp kosher salt, or to taste
- 1/4 tsp black pepper, or to taste
- Pinch of red pepper flakes (optional)
- 1/2 cup fresh basil leaves, chopped or torn
- Cooked spaghetti, for serving
Instructions
- Prep Ingredients: Rinse cherry tomatoes. Mince garlic.
- Sauté Garlic: Heat olive oil in a large skillet over medium heat. Add garlic and sauté for 1-2 minutes until fragrant and lightly golden.
- Simmer Tomatoes: Add cherry tomatoes to the skillet. Season with salt, pepper, and red pepper flakes. Increase heat to medium-high for 1 minute, then reduce to medium-low, cover, and simmer for 15-20 minutes, stirring occasionally, until tomatoes burst and form a sauce. Gently crush any remaining whole tomatoes.
- Finish with Basil: Remove from heat. Stir in fresh basil leaves. Taste and adjust seasoning as needed.
- Serve: Toss immediately with hot, cooked spaghetti or serve over your preferred pasta.
