This simple yet incredibly flavorful cherry tomato spaghetti sauce highlights the natural sweetness of fresh tomatoes. It’s a quick and easy weeknight meal that tastes like summer.
Ingredients
- 2 pints (about 4 cups) fresh cherry or grape tomatoes
- 3–4 cloves garlic, minced
- 3 tablespoons extra virgin olive oil
- 1/2 cup fresh basil, chopped
- Salt and freshly ground black pepper, to taste
- Optional: Pinch of red pepper flakes
- Optional: Drizzle of balsamic glaze
Instructions
- Prep Tomatoes & Garlic: Rinse tomatoes. Mince garlic finely.
- Sauté Aromatics: Heat olive oil in a large skillet over medium-low. Add garlic and cook 1-2 minutes until fragrant, being careful not to brown.
- Simmer Tomatoes: Add tomatoes, salt, and pepper to skillet. Increase heat to medium, bring to a gentle simmer. Reduce heat to low, cover, and cook for 15-20 minutes, stirring occasionally and gently pressing tomatoes to burst.
- Adjust Consistency: Uncover and mash remaining whole tomatoes to desired consistency. Simmer uncovered for a few extra minutes if a thicker sauce is desired.
- Finish with Basil: Remove from heat and stir in fresh basil. Taste and adjust seasonings. Serve immediately over your favorite pasta.
