Ingredients

  • 2 pints (about 4 cups) fresh cherry or grape tomatoes
  • 34 cloves garlic, minced
  • 3 tablespoons extra virgin olive oil
  • 1/2 cup fresh basil, chopped
  • Salt and freshly ground black pepper, to taste
  • Optional: Pinch of red pepper flakes
  • Optional: Drizzle of balsamic glaze

Instructions

  • Prep Tomatoes & Garlic: Rinse tomatoes. Mince garlic finely.
  • Sauté Aromatics: Heat olive oil in a large skillet over medium-low. Add garlic and cook 1-2 minutes until fragrant, being careful not to brown.
  • Simmer Tomatoes: Add tomatoes, salt, and pepper to skillet. Increase heat to medium, bring to a gentle simmer. Reduce heat to low, cover, and cook for 15-20 minutes, stirring occasionally and gently pressing tomatoes to burst.
  • Adjust Consistency: Uncover and mash remaining whole tomatoes to desired consistency. Simmer uncovered for a few extra minutes if a thicker sauce is desired.
  • Finish with Basil: Remove from heat and stir in fresh basil. Taste and adjust seasonings. Serve immediately over your favorite pasta.
