Ingredients
- 1.5 lbs cherry or grape tomatoes, halved
- 3–4 cloves garlic, minced
- 1/4 cup extra virgin olive oil
- 1/2 cup fresh basil, roughly chopped
- 1/2 tsp red pepper flakes (optional)
- Salt to taste
- Freshly ground black pepper to taste
Instructions
- 1. Prepare Ingredients: Halve all cherry tomatoes and finely mince the garlic. Roughly chop or tear the fresh basil.
- 2. Sauté Aromatics: Heat olive oil in a large skillet or wide pot over medium heat. Add minced garlic and red pepper flakes (if using). Sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.
- 3. Simmer Tomatoes: Add halved cherry tomatoes to the pan. Season with salt and pepper. Stir to combine. Increase heat to medium-high to bring to a simmer, then reduce to medium-low. Cover and cook for 15-20 minutes, stirring occasionally and gently pressing on tomatoes, until they burst and form a sauce.
- 4. Finish and Serve: Remove from heat. Stir in fresh chopped basil. Taste and adjust seasoning as needed. Serve immediately over your favorite pasta, or use in other dishes.
