Description
This simple yet incredibly flavorful cherry tomato spaghetti sauce is bursting with natural sweetness and fresh herbs. Perfect for a quick weeknight dinner or meal prep.
Ingredients
- 2 tablespoons extra virgin olive oil
- 4 cloves garlic, minced
- 2 pints (about 4 cups) cherry tomatoes
- 1/2 teaspoon kosher salt, or to taste
- 1/4 teaspoon freshly ground black pepper, or to taste
- 1/4 teaspoon sugar (optional, for balancing acidity)
- 1/4 cup fresh basil leaves, roughly chopped
- 1 tablespoon fresh oregano leaves, chopped
Instructions
- Heat olive oil in a large skillet or Dutch oven over medium heat. Add minced garlic and cook for 1-2 minutes until fragrant, being careful not to burn it.
- Add cherry tomatoes to the pan. Season with salt and pepper. Cover and simmer for 15-20 minutes, or until tomatoes have burst and softened, stirring occasionally.
- Remove lid. Using the back of a wooden spoon or a potato masher, gently mash some of the tomatoes in the pan to create a rustic texture.
- Stir in fresh basil and oregano. Taste and adjust seasonings (salt, pepper, and optional sugar) as needed. Simmer for another 5 minutes to meld flavors.
- Serve hot over your favorite pasta.
