Ingredients
- 2 pints (about 4 cups) cherry or grape tomatoes
- 4–5 cloves garlic, peeled
- 3 tablespoons extra virgin olive oil
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper, or to taste
- 1/4 teaspoon red pepper flakes (optional)
- 1/2 cup fresh basil leaves, roughly chopped
- Optional: 1 tablespoon balsamic glaze
Instructions
- 1. Prep Tomatoes & Aromatics: Preheat oven to 400°F (200°C). On a large baking sheet, combine cherry tomatoes, peeled garlic cloves, olive oil, salt, pepper, and optional red pepper flakes. Toss to coat evenly.
- 2. Roast for Flavor: Spread tomatoes and garlic in a single layer. Roast for 25-35 minutes, or until tomatoes are softened, shriveled, and some have burst.
- 3. Mash & Simmer Sauce: Carefully remove from oven. Using a potato masher or fork, gently mash the roasted tomatoes and garlic directly on the baking sheet. Transfer mixture with all juices to a saucepan. Simmer over medium-low heat for 5-10 minutes.
- 4. Finish with Basil: Remove from heat and stir in fresh chopped basil. Taste and adjust seasonings as needed. Serve immediately with your favorite pasta.
