Description
This vibrant cherry tomato spaghetti sauce is bursting with fresh flavor and comes together quickly. It’s naturally sweet, perfectly tangy, and incredibly versatile for any pasta night.
Ingredients
- 2 lbs (approx. 4 cups) cherry tomatoes, halved
- 2 tbsp extra virgin olive oil
- 1 medium yellow onion, finely chopped
- 4 cloves garlic, minced
- 1/2 tsp red pepper flakes (optional)
- 1/4 cup fresh basil, chopped
- 1 tbsp fresh oregano, chopped (optional)
- Salt and freshly ground black pepper to taste
Instructions
- Prep Ingredients: Wash and halve cherry tomatoes. Finely chop onion and mince garlic. Prepare fresh herbs.
- Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add onion and cook until translucent (5-7 mins). Stir in garlic and red pepper flakes (if using) for 1 minute until fragrant.
- Add Tomatoes & Simmer: Add halved cherry tomatoes, salt, and pepper to the pan. Bring to a gentle simmer, then cover and cook on low heat for 20-25 minutes until tomatoes are soft and burst.
- Mash & Reduce: Uncover and use a potato masher to gently mash some of the tomatoes. Continue to simmer, uncovered, for another 10-15 minutes, stirring occasionally, until the sauce reaches your desired consistency.
- Finish with Fresh Herbs: Remove from heat and stir in fresh basil and oregano. Taste and adjust seasoning as needed. Serve immediately with your favorite pasta.
