Ingredients
- 2 pints (about 4 cups) cherry tomatoes
- 1/4 cup extra virgin olive oil, plus more for serving
- 4–5 cloves garlic, minced
- 1/2 cup fresh basil leaves, torn or roughly chopped, divided
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper, or to taste
- Pinch of red pepper flakes (optional)
- 12–16 ounces spaghetti or your favorite pasta
- Freshly grated Parmesan cheese, for serving (optional)
Instructions
- 1. Roast the Tomatoes: Preheat oven to 400°F (200°C). On a baking sheet, toss cherry tomatoes with 2 tablespoons olive oil, salt, pepper, and red pepper flakes. Roast for 20-25 minutes until softened and bursting.
- 2. Sauté Aromatics: While tomatoes roast, heat remaining olive oil in a large skillet over medium heat. Add minced garlic and cook for 1-2 minutes until fragrant, being careful not to brown.
- 3. Combine and Simmer: Transfer roasted tomatoes to the skillet with garlic. Gently crush some tomatoes with a spoon. Add half of the fresh basil. Simmer for 5-10 minutes for flavors to meld.
- 4. Cook Pasta: Cook spaghetti according to package directions until al dente. Reserve 1 cup pasta water, then drain.
- 5. Toss and Serve: Add drained pasta to the sauce. Toss well, adding reserved pasta water if needed for consistency. Stir in remaining fresh basil. Serve immediately with Parmesan cheese, if desired.
