  • 3 Tablespoons extra virgin olive oil
  • 1 medium yellow onion, finely diced
  • 4 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 teaspoon granulated sugar
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper, or to taste
  • 1/4 cup fresh basil, roughly chopped
  • 2 Tablespoons fresh oregano, roughly chopped
  • Freshly grated Parmesan cheese, for serving (optional)

Instructions

  • 1. Prep Ingredients: Wash and halve cherry tomatoes. Finely dice onion and mince garlic. Chop fresh basil and oregano.
  • 2. Sauté Aromatics: Heat olive oil in a large skillet or Dutch oven over medium heat. Add diced onion and cook until softened and translucent (5-7 mins). Add minced garlic and red pepper flakes (if using), cook for 1 minute until fragrant.
  • 3. Burst Tomatoes: Add halved cherry tomatoes to the skillet. Increase heat to medium-high. Cook, stirring occasionally, until tomatoes soften, burst, and release juices (10-15 mins).
  • 4. Simmer: Stir in sugar, salt, and black pepper. Reduce heat to low, cover, and simmer for 15-20 minutes, stirring occasionally, to allow flavors to meld.
