Ingredients
- 2 pints (about 4 cups) cherry tomatoes
- 4–5 cloves garlic, minced
- 1/4 cup extra virgin olive oil
- 1/2 cup fresh basil leaves, torn or roughly chopped
- 1/2 – 1 teaspoon red pepper flakes (optional, to taste)
- 1 teaspoon sea salt (or more, to taste)
- 1/2 teaspoon freshly ground black pepper (or more, to taste)
- Optional: A splash of balsamic vinegar or a pinch of dried oregano
Instructions
- Prep Ingredients: Wash cherry tomatoes, mince garlic, and tear basil leaves.
- Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes; sauté for 1-2 minutes until fragrant, being careful not to brown.
- Simmer Tomatoes: Add cherry tomatoes, salt, and pepper to the pan. Stir, cover, and simmer for 15-20 minutes until tomatoes burst and soften.
- Crush & Season: Uncover and use a wooden spoon or potato masher to gently crush the tomatoes to a chunky consistency. Taste and adjust seasoning as needed.
- Finish with Freshness: Remove from heat and stir in fresh basil leaves until wilted. Serve immediately over pasta.
