Ingredients
- 2 Pints Cherry Tomatoes
- 1/4 cup Extra Virgin Olive Oil
- 4 cloves Garlic, minced
- 1/2 teaspoon Red Pepper Flakes (optional)
- 1/2 cup Fresh Basil, roughly chopped
- Salt to taste
- Freshly ground Black Pepper to taste
- 1/2 lb Spaghetti or other pasta
- Optional: Parmesan cheese for serving
- Optional: 1 cup Reserved pasta water
Instructions
- Wash and prepare cherry tomatoes. Mince garlic and chop basil.
- Heat olive oil in a large skillet over medium heat. Add garlic and red pepper flakes; sauté for 30 seconds until fragrant.
- Add cherry tomatoes to the pan. Cook for 8-12 minutes, pressing some to burst, until they soften and release juices.
- Reduce heat to low and simmer for 10-15 minutes, allowing flavors to meld and sauce to thicken slightly.
- Remove from heat. Stir in fresh basil, then season generously with salt and black pepper to taste.
- While sauce simmers, cook spaghetti according to package directions, reserving 1 cup of pasta water.
- Add hot, drained spaghetti to the sauce. Toss well, adding reserved pasta water as needed to create an emulsified sauce. Serve immediately with optional Parmesan.
