Description
A vibrant, incredibly flavorful cherry tomato spaghetti sauce that comes together quickly. Bursting with natural sweetness and aromatic basil, it’s perfect for a delicious weeknight meal.
Ingredients
- 2 lbs fresh cherry tomatoes
- 4–6 cloves garlic, crushed
- 1/4 cup extra virgin olive oil
- 1/2 cup fresh basil leaves, roughly chopped
- 1 tsp sea salt, or to taste
- 1/2 tsp black pepper, or to taste
- 1/4 tsp red pepper flakes (optional)
Instructions
- Rinse cherry tomatoes. Crush garlic cloves.
- Heat olive oil in a large skillet over medium heat. Add crushed garlic and red pepper flakes (if using). Sauté for 1-2 minutes until fragrant; do not burn.
- Add cherry tomatoes to the skillet. Season with salt and pepper. Stir, bring to a gentle simmer, then cover and cook on low for 15-20 minutes, stirring occasionally, until tomatoes soften and burst.
- Using the back of a spoon or potato masher, gently mash some of the tomatoes for desired consistency. Simmer uncovered for another 5-10 minutes to reduce slightly.
- Remove from heat. Stir in fresh basil. Taste and adjust seasonings. Serve immediately with your favorite pasta.
