Description
This easy cherry tomato spaghetti sauce is bursting with fresh, vibrant flavor and comes together in less than 30 minutes. It’s the perfect light and tangy topping for your favorite pasta.
Ingredients
- 2 pints (about 4 cups) cherry or grape tomatoes
- 2 tablespoons extra virgin olive oil
- 1 small red or yellow onion, finely chopped
- 3 cloves garlic, minced
- 1/2 teaspoon sea salt (or to taste)
- 1/4 teaspoon black pepper (or to taste)
- 1/4 teaspoon granulated sugar (or to taste)
- 1/2 cup fresh basil leaves, roughly chopped
- Cooked spaghetti or pasta of choice, for serving
- Optional: Parmesan cheese for garnish
Instructions
- 1. Prep Ingredients: Wash tomatoes. Halve larger tomatoes if desired. Finely chop onion and mince garlic.
- 2. Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add onion and cook 3-5 minutes until translucent. Add garlic; cook 1-2 minutes until fragrant, being careful not to burn.
- 3. Simmer Tomatoes: Add cherry tomatoes, salt, pepper, and sugar to the pan. Increase heat to medium-high. Cook, stirring occasionally and gently crushing some tomatoes with a spoon, for 10-15 minutes, until most tomatoes have burst and the sauce has slightly thickened.
- 4. Season & Finish: Remove from heat. Stir in fresh basil. Taste and adjust seasonings (salt, pepper, sugar) as needed.
- 5. Serve: Toss immediately with cooked spaghetti or serve over pasta. Garnish with additional basil or Parmesan cheese, if desired.
