This easy cherry tomato spaghetti sauce recipe transforms simple ingredients into a vibrant, flavorful pasta dish that’s perfect for any night of the week. Naturally sweet from roasted tomatoes, it’s a family-approved weeknight lifesaver.
Ingredients
- 2 pints cherry tomatoes
- 2 tablespoons extra virgin olive oil (plus more for roasting)
- 1/2 medium yellow onion, finely diced
- 4–5 cloves garlic, thinly sliced
- 1/2 cup vegetable broth or dry white wine (optional)
- Pinch of sugar (optional, about 1/2 tsp)
- 1/4 teaspoon red pepper flakes (optional)
- Large handful fresh basil, torn
- Few sprigs fresh oregano (or 1 tsp dried oregano, 1 tbsp dried basil)
- Coarse sea salt and freshly ground black pepper, to taste
Instructions
- 1. Roast Cherry Tomatoes: Preheat oven to 400°F (200°C). Arrange tomatoes on a baking sheet, drizzle with olive oil, salt, and pepper. Roast for 20-25 minutes until blistered and soft.
- 2. Sauté Aromatics: While tomatoes roast, heat 2 tbsp olive oil in a large pot over medium heat. Sauté onion until translucent (5-7 mins). Add sliced garlic (and red pepper flakes) and cook for 1-2 minutes until fragrant.
- 3. Simmer Sauce: Add roasted tomatoes (with pan juices), broth/wine, and sugar (if using) to the pot. Bring to a gentle simmer, then cover and cook on low for 15-20 minutes. If using dried herbs, add them now.
- 4. Mash and Finish: Remove lid. Gently mash tomatoes to desired consistency using a potato masher or immersion blender. Stir in fresh basil and oregano. Taste and adjust seasoning with salt, pepper, or sugar. Serve immediately with your favorite pasta.
