Description
This easy and delicious cherry tomato spaghetti sauce features perfectly roasted tomatoes for a burst of sweet and savory flavor. It’s a quick, vibrant, and incredibly satisfying sauce that will become your new go-to.
Ingredients
- 2 pints (about 4 cups) cherry or grape tomatoes
- 3 tbsp extra virgin olive oil, divided
- 1/2 tsp salt, plus more to taste
- 1/4 tsp black pepper, plus more to taste
- 4–6 cloves garlic, minced
- 1/4 cup fresh basil, chopped
- Optional: 1 tsp balsamic glaze
- Optional: 1/4 tsp red pepper flakes
- Your favorite pasta, for serving
Instructions
- 1. Preheat oven to 400°F (200°C). On a large rimmed baking sheet, toss cherry tomatoes with 2 tbsp olive oil, 1/2 tsp salt, and 1/4 tsp black pepper. Spread in a single layer.
- 2. Roast for 20-25 minutes, or until tomatoes have burst, softened, and are slightly caramelized.
- 3. While tomatoes roast, heat 1 tbsp olive oil in a large skillet or Dutch oven over medium heat. Add minced garlic (and red pepper flakes, if using) and sauté for 1-2 minutes until fragrant.
- 4. Carefully pour the roasted tomatoes and all their juices into the skillet with the garlic. Stir and bring to a gentle simmer. Cook for 10-15 minutes, allowing flavors to meld.
- 5. Gently mash some of the tomatoes with the back of a wooden spoon or potato masher to create a desired consistency. Stir in fresh chopped basil and balsamic glaze (if using).
- 6. Taste and adjust seasoning with more salt and pepper as needed. If sauce is too thick, add a splash of pasta water or vegetable broth. Serve immediately with pasta.
