Ingredients

  • 2 pints (about 4 cups) cherry tomatoes
  • 46 cloves garlic, peeled and lightly smashed
  • 3 tablespoons extra virgin olive oil
  • 1/2 teaspoon sea salt, plus more to taste
  • 1/4 teaspoon black pepper, plus more to taste
  • 1/4 cup fresh basil, chopped
  • Optional: Pinch of red pepper flakes, drizzle of balsamic glaze

Instructions

  • Prep Tomatoes and Garlic: Preheat oven to 400°F (200°C). On a large baking sheet, spread cherry tomatoes and smashed garlic. Drizzle with olive oil, salt, and pepper. Toss to coat.
  • Roast for Deep Flavor: Roast for 25-30 minutes, until tomatoes are soft, slightly shriveled, and some have burst. Garlic should be golden.
  • Simmer and Smash: Transfer roasted tomatoes, garlic, and pan juices to a skillet. Over medium heat, gently smash tomatoes to desired consistency. Simmer 5-7 minutes.
