This easy cherry tomato spaghetti sauce recipe is bursting with fresh flavor. It’s quick, versatile, and perfect for a delicious weeknight meal.
Ingredients
- 1 tbsp extra virgin olive oil
- 3 cloves garlic, minced
- 1 small shallot or 1/4 small yellow onion, finely chopped (optional)
- 2 pints (about 4 cups) cherry or grape tomatoes, halved
- 1/2 tsp salt, plus more to taste
- 1/4 tsp black pepper, plus more to taste
- 1/4 – 1/2 tsp red pepper flakes (optional)
- 1/4 cup fresh basil leaves, torn or chopped
- 1 tsp balsamic glaze or vinegar (optional, for brightness)
Instructions
- Heat olive oil in a large skillet or wide pot over medium-low heat. Add minced garlic and chopped shallot/onion (if using). Cook gently for 3-5 minutes until softened and fragrant, without browning.
- Increase heat to medium. Add halved cherry tomatoes, salt, and pepper to the skillet. Cook for 10-15 minutes, stirring occasionally and gently mashing with the back of a spoon to help them burst and release their juices.
- Continue to cook until the sauce has thickened and most of the tomatoes have broken down, reducing slightly.
- Remove from heat. Stir in fresh basil, red pepper flakes (if using), and balsamic glaze (if using).
- Taste and adjust seasoning as needed – a tiny pinch of sugar can balance acidity if desired.
- For a smoother sauce, carefully blend with an immersion blender or in a regular blender until desired consistency is reached.
- Serve immediately over your favorite pasta.
