Ingredients

  • 1 tbsp extra virgin olive oil
  • 3 cloves garlic, minced
  • 1 small shallot or 1/4 small yellow onion, finely chopped (optional)
  • 2 pints (about 4 cups) cherry or grape tomatoes, halved
  • 1/2 tsp salt, plus more to taste
  • 1/4 tsp black pepper, plus more to taste
  • 1/41/2 tsp red pepper flakes (optional)
  • 1/4 cup fresh basil leaves, torn or chopped
  • 1 tsp balsamic glaze or vinegar (optional, for brightness)

Instructions

  • Heat olive oil in a large skillet or wide pot over medium-low heat. Add minced garlic and chopped shallot/onion (if using). Cook gently for 3-5 minutes until softened and fragrant, without browning.
  • Increase heat to medium. Add halved cherry tomatoes, salt, and pepper to the skillet. Cook for 10-15 minutes, stirring occasionally and gently mashing with the back of a spoon to help them burst and release their juices.
  • Continue to cook until the sauce has thickened and most of the tomatoes have broken down, reducing slightly.
  • Remove from heat. Stir in fresh basil, red pepper flakes (if using), and balsamic glaze (if using).
  • Taste and adjust seasoning as needed – a tiny pinch of sugar can balance acidity if desired.
  • For a smoother sauce, carefully blend with an immersion blender or in a regular blender until desired consistency is reached.
  • Serve immediately over your favorite pasta.
