Ingredients
- 2 pints (approx. 1 kg) cherry tomatoes
- 4–5 cloves garlic, minced
- 3 tablespoons extra virgin olive oil
- 1/4 cup fresh basil, chopped + more for garnish
- 1/4 – 1/2 teaspoon red pepper flakes (optional)
- Salt and freshly ground black pepper to taste
- 12 ounces spaghetti or other pasta
- Parmesan cheese, for serving (optional)
Instructions
- Prep Ingredients: Wash cherry tomatoes and mince garlic. Roughly chop fresh basil. If serving with pasta, start boiling water.
- Sauté Aromatics: Heat olive oil in a large skillet or wide pot over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- Add Tomatoes & Season: Immediately add cherry tomatoes to the pan. Season with salt, black pepper, and red pepper flakes (if using). Stir well.
- Simmer Sauce: Reduce heat to medium-low, cover, and simmer for 10-15 minutes, or until tomatoes have burst and softened. Gently press some tomatoes with a spoon.
- Finish with Basil: Remove from heat and stir in the fresh basil. Taste and adjust seasonings as needed.
- Combine & Serve: Drain cooked pasta, reserving 1/2 cup pasta water. Add pasta to the sauce and toss, adding reserved pasta water for desired consistency. Serve immediately with extra basil and Parmesan, if desired.
