Ingredients
- 2 pints (about 4 cups) cherry or grape tomatoes, halved
- 1/4 cup extra virgin olive oil
- 6–8 cloves garlic, thinly sliced
- 1/2 teaspoon red pepper flakes (optional, for heat)
- 1/2 cup fresh basil leaves, roughly torn or chopped
- Salt and freshly ground black pepper to taste
- Optional: balsamic glaze or grated Parmesan for serving
Instructions
- Heat olive oil in a large skillet over medium-low heat. Add garlic and red pepper flakes (if using) and sauté gently until fragrant, about 2-3 minutes. Do not brown the garlic.
- Add the halved cherry tomatoes and a pinch of salt. Increase heat to medium, cover, and simmer for 10-15 minutes, stirring occasionally, until most tomatoes have burst.
- Remove lid. Using the back of a spoon, gently smash some of the tomatoes to create your desired consistency. Stir well.
- Taste and season with additional salt and black pepper as needed.
- Remove from heat, stir in fresh basil. Serve immediately over hot pasta, optionally with balsamic glaze or Parmesan.
